Chickpea Summer Salad
Quick and easy meal idea that is a crowd pleaser as well as a healthy meal option. Stores for days in the fridge and super versatile! Add your choice of protein if you like.
- 1 can chickpeas washed and drained
- 1 red bell pepper chopped
- 1 yellow bell pepper chopped
- 1/4 cup olive oil the good kind!
- A few splashes white balsamic or white wine vinegar adjust to your taste preference
- 4 springs green onion chopped
- 1/2 cup Greek feta crumbled
- salt / pepper / oregano
