Dandelion Weeds (Horta)

We all know how important it is to eat our greens but are you sick of the same old, same old? Kale, spinach and lettuce are great, but it's important to add some variety to our meals. Next time you're in the supermarket check out DANDELION WEEDS! These bitter babies are a great source of vitamins and minerals (Vitamin C, K, Folate, Calcium, Magnesium and Iron) and pair up beautifully with shallots, garlic, olive oil and lemon! Try it out and discover a Greek alternative to healthy living!

Instructions

  • Wash greens thoroughly, cut the stems and boil in salted water for at least 15-20 minutes until soft. Drain water and mix in olive oil, freshly squeezed lemon, salt. Add in some chopped garlic or shallots and enjoy!

Notes

There are many types of HORTA. Another option is VLITA (amaranth).  Vlita are typically much sweeter and are paired nicely with red wine vinegar and olive oil.
