Sour Trahana Soup with Beef

This soup is a classic village soup that many Greek kids probably ate while visiting their Grandmothers in Greece. Trahana is basically a type of pasta made from wheat or bulgur and yogurt. I use the sour kind because I prefer the tartness of the flavour, but it's also what was always served to me as a kid.

Ingredients
  

  • 1 cup Trahana (sour or sweet) pasta you can find this at any Greek supermarket
  • 6-8 cups water this depends on how thick you want your soup
  • 1 can / jar tomato sauce
  • 2 beef bouillon cubes
  • 400 grams beef cubes optional, you can make this dish without meat. This reduce your cooking time by at least 20 minutes.
  • 1/2 cup olive oil use less if you're adding meat to this dish as it will render additional fat.
  • 2 tbsp. tomato paste optional, I prefer the depth of flavour and colour tomato paste adds but it's not necessary.
  • 1 large chopped onion
  • 3 cloves minced garlic
  • 2 bay leaves
  • salt to taste
  • pepper to taste
  • 1 tsp. dried oregano to taste
  • 1 tsp. garlic powder optional

Instructions
 

  • In a large pot add olive oil and beef cubes and brown, to this you will add onions and garlic and sauté until onions have sweat and softened.
  • Add the spices and bay leaves and mix well, follow by adding enough water to cover the beef and boil for about 15 minutes. After 15 minutes continue checking the meat and boil until cooked. You'll know when it's ready when you're able to pierce the beef with a fork. Add water if needed.
  • Add tomato sauce and paste and trahana at this point and continue cooking on stove top at medium/ low heat stirring often. Trahana pasta has a tendency to stick to the bottom of the pot so make sure you're on top of it and add water if you feel it becomes too thick too quickly. Continue boiling for another 15-20 minutes. Once meat is cooked and trahana is the consistency you want it's ready!
