Oatmeal Banana Muffins

Tell me I'm not the only one with an evening sweet craving!? It's hard to make great food choices without a little bit of prep. These bite size treats are healthy - ish and will definitely nip that craving in the butt! The trick is to make a batch, freeze them and keep them on hand for those moments of weakness! Flourless and versatile you can adapt this recipe to your taste and add anything from nuts to dried fruit. You can use regular granulated sugar or Monk fruit sweetener, which is what I opted for in this recipe. It is forgiving and easy and sure to become a staple in your home.

Ingredients
  

  • 4 ripe bananas see notes
  • 1 cup chocolate chips
  • 1 cup crushed walnuts
  • 1 cup vegetable oil
  • 4 cup dried oats I used steel cut oats, but rolled oats work too.
  • 1 tbsp cinnamon
  • 1/4 tsp ground clove powder
  • 2 tbsp baking powder
  • 1 cup Greek yogurt
  • 1 tbsp pure vanilla extract Don't use the fake stuff, it sucks.
  • 1 cup monkfruit natural sweetener You can use granulated sugar or brown sugar if you like.
  • 1 tsp salt
  • 3 eggs

Instructions
 

  • In a stand mixer (or hand held mixer if you prefer) beat eggs with vanilla extract and then add oil, sugar and yogurt. Mix all wet ingredients well.
  • Begin to add the oats, and the rest of the dry ingredients and mix until combined. If you find that the mixture is too wet, then add an extra 1/2 cup of oats. The mixture should not be runny.
  • Line your muffin tins with liners and fill with 1/4 - 1/3 cup batter. Keep in mind that although these will fluff up, they will not overflow so feel free to fill up close to the top.
  • Bake in the middle rack for about 17 minutes at 350 degrees. Let cool and enjoy!

Notes

Did you know that you could freeze ripe bananas? Keep them in their peel and throw them in the freezer.  When you're ready to bake just thaw them at room temperature for about 2 hours.  If you're in a hurry, pop the frozen bananas in the microwave at 50% power for about 2 minutes.  Voila, you've got your bananas ready to use in your favourite recipe!
